Coming up to the end of summer means gearing up for holidays. I have a lot of things I'm going to be trying so I need to share them!<br />
To begin my bestie came over with the ingredients for *wait for it* strawberry rhubarb pie! Only she brought along a big 6 muffin sized tin to make little pies *dies of happiness*. So she sliced the rhubarb and then I took over. She likes this kind of cooking and I like not having to figure out and find the ingredients. Basically we both win.<br />

Use pre-rolled pie crust to save on time and sanity. Be sure to grease and flour your tin to ensure these delicate pies pop right out of the tin.<br />

One for bases and one for lattice! I used a crinkle cutter (Pampered Chef) and first quartered the dough and then cut strips. Use a flour and powdered sugar mixture to keep dough from sticking to the counter. <br />

Why? When you place the tin on a flat surface the tin heats the counter and keeps the bottoms warm while the rest of the pie cools down. When you try to pop them out the bottom won't have set like the rest and will have a greater tendency to stack stuck to the bottom of the tin. That would be sad wouldn't it?<br />
<br />
Ready for the recipe modified and simplified from allrecipes.com:<br />
3 c. rhubarb sliced<br />
3 c. strawberries quartered<br />
1 c. sugar<br />
1/2 c. all purpose flour<br />
Dash of nutmeg <br />
1 package pre-rolled pie crust<br />
<br />
1. Mix rhubarb slices and strawberry quarters together with the sugar, flour, and nutmeg. Allow to sit for 30 minutes to fully combine. <br />
2. While that is combining grease and flour tin. Use cookie cutter (or a LARGE glass) to cut out pie bases. Place pie base over well and gently press into tin (DO NOT PUSH INTO WALLS). Gently form the dough into the well.<br />
3. Cut lattice strips but wait to pick up till pies are filled.<br />
4. Fill pie crusts and then weave the lattice top<br />
5. Bake at 325 for 10-15 minutes (crust will be golden and the filling will bubble).<br />
<br />
Once they have FULLY cooled take a butter knife and run it along the edge to loosen up the pies. Then lay a cutting board over the tin and flip it over to pop the pies out. Carefully flip them over onto a platter, garnish, serve and enjoy!<br />

For two servings you will ONLY need 3 tbs. of oil. Use canola as it's more heart friendly then vegetable. If you really want to cut then heat water and use that as your base - although you'll want closer to 4 tbs. Water has a lower evaporation point then oil (oh yeah oil evaporates alright) so you use more water cause you'll loose more in the heating process. Oil is hot enough when a drop of water sizzles on contact. Stir constantly to get the oil mixed into the mix and fully brown all sides. Since this is strips this step takes 8-10 minutes. Overcooking results in rubbery meat. Don't worry if it's not done through - it continues to cook even after being removed from heat. The secret to tender meat is to trust your cooking time. You can always cook more - you can't undo overcooking.<br /><br />Step nine: The last two minutes of cooking is when you toss in those colorful veggies. Cooking a veggie down drains their nutrients. You want your veggies heated through, but not wilted. Two-three minutes opens the veggies up enough to release flavor, but keeps them from becoming mush. Continue pushing your yummy fajita mess around.<br /><br />Step ten: Allow the mixture to sit for a few minutes after removing from heat. Last minute thickening of the sauce will happen (remember the cornstarch? Well it mixed with the oil and created a nice glaze sauce that even coats your meat). I take the thinner pieces and clip two together with either an office clamp or pin them with a safety pin before sewing them into the taggie. Makes for a double the texture and fun! Isn't it delightful?? Another detail I put into mine which differs from the original is that I found some thinner ribbons and put them together for an altogether different texture. While, yes, it is techinically safe stoneware can crack when going from one temperature extreme to another. I assembled the food on aluminum like <a href="http://moneysavingmom.com/2010/09/my-freezer-cooking-plan-and-come-link-up-yours.html">Money Saving Mom</a> suggested then lifted out to a tempered glass board and put it in the freezer. This is my first run, but I already feel prepared for a night where I don't feel like cooking.<br /><br />Simply take taquitos, place in dish, top with cheese and bake for 25 min. at 350 degrees. Allow to cool for about 10 min., top with sour cream and salsa and dig in! I feel inspired, but she referred to a site. When I got there I nearly clicked away but in the maze of a site lies a true gem! I will be following the 31 day guide to getting a grip on my home. I am notoriously disorganized, messy and attracted to, well, the overwhelming sense of never being able to find anything...maybe it's the adrenaline that one gets from a horror movie only put me in the victim's spot and give the tormentor some catchy phrase like, "You have to go get diapers since your son filled his with a biologic weapon of mass destruction and it was the last one but you can't find your license or debit card....and I'll never tell you where it is!!!" Lastly, to round out our date we went to a movie. This is the part that usually costs and arm and a leg. But using a Fandango promotion we got tickets to The Socerer's Apprentice at...you guessed it....BOGO! Our entire date cost approximately 35 bucks. For only a little more a month more we get another bedroom, two stories, a full basement and something you don't find in modern, factory pumped out homes: character. So, yes, we went and we looked, and we fell in love. Affordable, bigger, better. Could we ask for more? Yes we can. Our landlord is actually an officer who works in Salem!!!! So yesterday in went the 30-day notice. I made a triple chocolate chunk cake by Betty Crocker, but used coconut oil in place of the vegetable oil (it's way better for you). You know the ones. Where you wake up much earlier than your body wants to simply because your brain and body are somewhat out of sync. I squirmed around in the softness of the silky feeling sheets, but no amount of tired body bribing could convince my brain to shut back down. So I got up and allowed for the hot streams of water to caress my still sleeping muscles and attempt to convince them that they should wake up. They refused, which, as you know, makes a shampoo job seem more like a cat washing affair in all the trouble it is. <br /><br />When you have a day like this the brain, which was the root of this whole ordeal, stays awake until your body begins to respond and then steps back out for a cat nap leaving you with a dreary feeling. Nice trick if you ask me. Wake up just enough to leave your victim feeling strung out. It's at these moments that I appreciate the elixir of life. That dark stream of richness which promises to beat some sense into that awful organ who had the indecency to leave you in the situation which you have, ponderously, found yourself in. <br /><br />A cup (or three) of God's sure sign he's still thinking of me and I surveyed the damage. See I reside in a domicile filled with destructive forces with black holes where stomachs should be. The morning routine? Carelessly dump toys in the walking path of the mindless zombie who will be roused from her precious sleep to stumble into the kitchen in hopes of a cure....sound familiar? If not allow me to expound: zombies are not generally assosciated with pleasant heart and flower type thoughts. More along the lines of monstrous and avoid at all costs type thoughts. Do destructive forces follow these rules? Most certainly not! They enrage it with sharp toys placed in, what I believe are, carefully chosen places to maximize damage. Actually when I think about it it's quite brilliant...<br /><br />This morning was particularly tiresome since we were supposed to be entertaining guests. Seems a little extreme right? Wrong! I began week three of this lovely term with this unbelievably cruel class and high hopes. By Sunday I was a miserable, sobbing heap with a husband who shielded the children from various flying objects that varied from calculators to notebooks with what appears to be a foreign language scribbled all over them. Oh dear God help us all! Tons - and I literally mean TONS - of high resolution, tileable grunge patters. I'm trying some out as we speak (type?) and they are simply wonderful. Thanks psdtuts - you've done it again!
